Casa Corral started the way most good tortillas do: with too many potatoes and a Sunday with nothing else to do. What began as feeding friends and neighbours turned into a small, made-to-order kitchen run out of my own home, one tortilla at a time.

Every tortilla is cooked by hand in a home kitchen, not a commercial one — which is exactly why nothing is made until you've asked for it. I peel and slice the potatoes myself, cook them slowly in oil until they're soft rather than fried hard, and fold them through good eggs before finishing each tortilla in a well-seasoned pan. No shortcuts, no pre-made mix, no freezer.

I use free-range eggs and potatoes from a greengrocer a few streets away, because the quality of what goes in is most of what makes a tortilla worth eating. It's a small operation on purpose — small enough that I can cook every order myself and stand behind it.
